Humans have been applying technology to preserving food it
since, well, forever. The oldest methods of food preservation
are drying, pickling and fermentation. Modern methods
include pasteurisation, freezing, irradiation and the addition
of chemical preservatives. This project kit focuses on the
dehydration process, which is one of the oldest methods
and was used by prehistoric man. South Africans have used
dehydration as the preferred method of preserving meat and
it has become a cultural favourite – BILTONG!!
